1 cup rice flour (brown or white)
1/2 cup cornstarch
1/2 cup brown sugar (or less if you don't want them as sweet)
2 t baking powder
1 t cinnamon
1/2 t xanthan gum
1/4 t salt
2 eggs
1/4 cup butter, melted
1/3 cup milk
1 apple, peeled & diced
Combine eggs, milk, and butter, then add dry & mix. Mix in apple. Bake at 350 degrees for 30 minutes. Makes 12 regular-sized muffins.
